Eggplant Tomato Curry


3.Coriander powder
4.Cumin seeds
5.Curry leaves
6.Ginger garlic paste
7.Green chillies
8.Mustard seeds
12.Red chilli powder
13.Salt to taste
14.Sesame seeds
15.Turmeric powder


1.First cut the eggplan and fry in the oil and keep a side in a separate bowl.
2.Heat some oil in a pan,add dried red chillies,cumin,mustard seeds,onions,curry leaves,green chillies,ginger garlic paste and mix well.
3.Add turmeric powder,tomatoes and saute for few minutes.Add coriander powder,red chilli powder.Cover and cook for 5 minutes till tomatoes are soft and tender.
4.Now add fried brinjals and mix well.Cover and cook for 3-4 minutes,add sesame,peanuts powder to the frying pan.Switch off the flame.
5.Cover and steam for few minutes,garnish with coriander leaves.
