Hyderabadi Chicken Biryani


1.Basmati rice
2.Black Cardamom
3.Green Cardamom/Powder as well
6.Cinnamon stick
10.Ginger garlic paste
11.Red chilli powder
13.Garam masala powder
14.Brown onions
16.Coriander leaves
17.Pudina leaves
18.Green chillies
19.Turmeric powder
20.Lemon juice


1.Boil some water in a pan,meanwhile tie the following ingredients in a muslin cloth (black cardamom,green cardamom,pepper,cinnamon stick,cloves).
2.Drop them in boiling water,add shahijeera,salt,soaked basmati rice and mix well.Cook the rice till 3/4th done.
3.Marinate chicken in a bowl,ingredients as follows ginger garlic paste,red chilli powder,curd,garam masala powder,green cardamom powder,brown onions,ghee,coriander leaves,pudina,green chillies,turmeric powder,lemon juice and mix well.
4.Marinate aside for  20 minutes.
5.Now layer the parboiled rice on marinated chicken,sprinkle some coriander leaves,pudina leaves,brown onions,garam masala powder,green cardamom powder on top spread one more layer of rice.Remove tied muslin cloth.
6.Finally top it with coriander,pudina,garam masala powder,green cardamom powder,saffron soaked in milk,ghee.
7.Prepare a smooth dough and line it up,now run the dough on edges of vessel and stick it well.
8.Cover and cook for 15 minutes till steam escapes from the gaps of dough.Now lower the heat and cook for another 5-8 minutes till done.Finally remove the lid and fluff the rice with wooden spatula and serve hot with garnished mint leaves.
