Roasted Butter Chicken


3.Green Cardamom
4.Blade mace
5.Pepper Corns
6.Cumin seeds
7.Dried Fenugreek leaves
8.Garlic cloves
10.Bay leaves
12.Coriander leaves
13.Fresh cream
17.Cashew nuts


1.Preheat oven at 220 degrees C.
2.Combine green cardamom,cumin seeds,dried fenugreek leaves,pepper corns,garlic cloves,salt,bay leaves,mace and blend into fine powder.
3.Combine ground powder into a bowl,add coriander leaves,cream,butter and blend well.
4.Place the chicken in baking tray and loosen the skin,pour the ground paste all over the chicken.
5.Cut lemons into cubes and stuff inside wings and legs.Spread tomatoes across the chicken and onions on top.
6.Sprinkle cashew nuts on top,roast for 20-30 minutes.Remove from heat and blend tomatoes,onions,lemons,cashew nuts into a fine paste.
7.Turn the chicken and roast for another 10-15 minutes.Heat a non stick pan,add blended paste,remaining butter,cream and salt.Mix well and cook.
8.Remove the chicken from oven and place a hot coal piece in the tray,cover with aluminium foil and keep it for 1-2 minutes.
9.Place roasted chicken on serving plate and pour the gravy on top.Garnish with coriander leaves and lemon wedges.
