Vegetable Jalfrezi Makhni


2.Cashew nuts
3.Kashmiri red chillies
4.Green chilly
9.Whole garam masala
10.Ginger garlic paste
11.Kasoori methi
12.Vegetables (beans, carrot, baby corn, bell peppers/capsicum)
14.Bell peppers (red, green, yellow)
15.Garam masala
16.Spring onions
17.Coriander chopped


1.Heat some butter in a pressure pan,tie whole garam masala in small cloth and place aside in pressure pan.
2.Add onions,cashew nuts,salt and saute till slightly transparent.Add ginger garlic paste and saute for a minute.
3.Add green chillies,red chillies,tomatoes and mix well,cover and cook for 5-6 whistles.
4.Strain water into a separate bowl,blend remaining ingredients into fine thick paste.
5.Now filter the blended paste into a separate bowl,Transfer the mixture into a separate pan.
6.Add sugar,kasoori methi,butter,fresh cream and mix well.This is Makhni Gravy.
7.Heat butter in a pan add parboiled vegetables cut them into lengthwise
(carrot, beans, baby corns) saute this and add onions, bell peppers
(red, green, yellow) saute this for some time.
8.Add makhani gravy and
cook this for 5 minutes and add garam masala, spring onions (optional),
chopped coriander, toss it and add cream and mix it, switch off the
flame,Serve hot.
