Asian Style Tofu Curry With Roasted Eggplants


1.Soya Paneer
2.Brinjal big size
3.Red Capsicum
4.Spring onions
5.Lemon grass roots
6.Grated Ginger
7.Sesame seeds
8.Dark Soya sauce
9.Red chilli sauce
10.Basil leaves
11.Corn flour
12.Sesame oil


1.Firstly grate ginger,cut lemon grass roots,chop spring onions,capsicum cut into wedges,cut brinjal (egg plants) into 1 inch pieces,keep aside.
2.Meanwhile combine corn flour,salt,crushed pepper corns and mix well with water,prepare a smooth mixture.
3.Add soya sauce,red chilli sauce and stir well evenly,keep aside.
4.Heat some oil in a pan,add brinjal pieces and stir for few seconds,sprinkle some salt,cover and cook for couple of minutes.
5.Sprinkle some water and cook till tender by covering a lid,transfer into a bowl.
6.Heat some oil in the same pan,add spring onions,lemon grass roots,grated ginger,capsicum and saute them on high heat till slightly tender.
7.Add corn flour mixture and mix well,make sure without any lumps.Cook on medium heat till sauce thickens.
8.Add some sugar or tomato sauce as well,give it a stir.
9.Finally add fried brinjal,tofu and give it a stir.Add basil leaves and stir.Cover and cook on medium flame.Once done serve hot with rice.
