1.Cut brinjals into 4 quarters and deep fry in hot oil,keep aside.
2.Dry roast peanuts,sesame seeds in equal quantities for few minutes and add coconut powder.
3.Dry roast for few minutes and blend into a fine paste.
4.Heat some oil in a pan,add mustard seeds,red chillies,cumin seeds,fenugreek seeds and saute.
5.Add onion sliced,salt,curry leaves and fry till onions nice golden brown colour.
6.Add ginger garlic paste and saute till raw flavour is all gone.Add pinch of turmeric powder,red chilli powder,cumin powder,coriander powder,green chillies,ground paste and mix well.
7.Add required amount of water till curry becomes thin,cover and cook for 30 min till oil gets separated from the curry.
8.Add pudina,coriander leaves and mix well,add curd and bring it to a boil.Cook for 2-3 min on medium flame.
9.Add fried brinjals to the pan,cook for another 3-4 minutes till all the juices infused in brinjals.Serve hot.
