Mushroom Corn Cashew Curry


3.Cashew nuts
5.Ginger chopped
6.Green chilli chopped
8.Cumin seeds
10.Turmeric powder
11.Red chilli powder
12.Coriander powder
13.Salt to taste
14.Coriander leaves


1.Blend tomatoes,cashews,ginger,green chillies to make a thick paste.
2.Heat some oil in a pan,add cumin seeds,when they start crackling add tomato paste.
3.Now add coriander powder,red chilli powder,turmeric powder and salt.Simmer the heat and cook for about 4-5 min.
4.Add corn,mushrooms and 1-1/2 cups of water.Cook for about 10-12 min,keep stirring in between to avoid sticking to the bottom of pan.
5.Cook till corn and mushrooms are tender in nature,gravy thickens.Once done serve hot with naan or rotis.
