Saoji Maharashtrian Egg Curry


1.Whole garam masala
2.Coriander seeds
3.Poppy seeds
4.Fennel seeds
6.Dried red chillies
8.Coconut powder
9.Onions chopped
10.Turmeric powder
11.Ginger garlic paste
12.Tomatoes chopped
13.Spinach chopped


1.Heat some oil in a pan add onions,salt and saute till brown colour,add turmeric powder,ginger garlic paste and fry till raw smell goes off.
2.Add tomatoes,ground masala powder and cook till tomatoes are soft and tender,becomes mashy.Cook for 5 minutes on medium flame.
3.Add spinach and fry till tender,add some water and bring it to boil for 2 minutes.
4.Cover and cook for another 2 minutes,finally add boiled eggs to the pan and give it a good mix.Sprinkle some coriander leaves and serve hot.
