Instant Vankaya Masala


1.Brinjal cut into thin slices
3.Green chillies
4.Cashew nuts
5.Coriander leaves
7.Salt to taste
8.Red chilli powder


1.Take a pan pour 4 tbsp oil and heat it,add brinjal pieces and fry for few minutes on medium flame.
2.Fry till nice brown colour and transfer into a bowl.
3.In the same pan add 2 tbsp oil and heat it, add onion masala paste (blend tomatoes,onions,cinnamon stick,cloves,cashew nuts or almonds) and saute till raw smell goes off.
4.Add fried brinjal pieces,sprinkle some salt and give it a stir.Cook for few minutes and finally transfer into a bowl,garnish with pudina and coriander leaves.Serve hot.
