Pumpkin Coconut Curry


2.Poppy seeds
3.Coconut grated
4.Cashew nuts
5.Green chillies
7.Mustard seeds
8.Cumin seeds
9.Fenugreek seeds
11.Curry leaves
12.Salt to taste
13.Coconut milk
15.Tamarind juice
16.Coriander leaves


1.Dry roast poppy seeds,cashew nuts for few minutes till they turn into light golden brown colour.
2.In the same pan add grated coconut,green chillies and mix well.fry for another few minutes,blend into a smooth paste.
3.Take another pan pour some oil and heat it,add mustard seeds,cumin seeds,fenugreek seeds and saute.
4.Add onions chopped,salt and saute till light brown colour,add curry leaves,pumpkin pieces.ground paste,some water as required and mix well.
5.Cook for few minutes,when pumpkin is half cooked add coconut milk and give it a good stir.
6.Cover and cook for few minutes on medium flame,sprinkle some sugar and cook until oil floats on top.Sprinkle some coriander leaves and serve hot.
