Baingan Kachori Recipe


1.Brinjal (Preferably large size)
2.Besan flour
3.Chat masala powder
4.Dry Mango powder
5.Pepper powder
6.Onion chopped
7.Garam masala powder
8.Tamarind pulp
10.Carrot grated
14.Red chilli powder


1.Heat sufficient oil for deep frying.
2.Prepare besan batter mixed with salt,chat masala powder,red chilli powder and besan flour.
3.Cut the brinjals into round slices and dip them in besan batter.Coat well properly.
4.Gently drop them in hot oil and deep fry,keep turning on both sides and fry till golden.Transfer into a plate.
5.Take another pan,add 2 tbsp oil and heat it.
6.Now place the fried brinjal slices in it and sprinkle some black salt,dry mango powder,pepper powder,onions,coriander powder.Toss well.
7.Meanwhile take a bowl,add in curd,2 tbsp sugar and salt.Mix well evenly.Toss well the brinjal slices,sprinkle some red chilli powder,salt.Toss well.
8.Transfer into a plate,make small holes in middle of brinjal slice and add some tamarind pulp,curd mixture,carrot grated,sev and finally garnish with onion chopped and serve immediately.
