Thotakoora Veg Fry


1.Thotakoora 2 cups (Amaranth Leaves)
2.Boiled Vegetables 1 cup (Beans,Green peas,Cauliflower,Carrot)
3.Tempering Seeds 1 tbsp
4.Dry red chillies 2
5.Green chillies 2
6.Curry leaves
7.Salt to taste
8.Coconut powder 1/2 cup
9.Oil 2 tbsp
10.Coriander leaves


1.Take a pan pour some oil,heat it.
2.Add dry red chillies,tempering seeds and saute till they start spluttering.
3.Add green chillies,curry leaves,thotakoora chopped finely,cook until leaves become tender and done.
4.Add salt to taste,boiled vegetables and mix well.
5.Add coconut powder and give it a good mix.(Coconut powder is optional)
6.Cook for few minutes and transfer into a bowl,garnish with coriander leaves and serve hot with chapathis..!!!!!
