Nimbu Jeera Pulao


1.Basmati Rice soaked 1 1/2 cup
2.Mustard seeds 1/2 tbsp
3.Cumin seeds 3 tbsp
4.Chana dal 1 tbsp
5.Cloves 4
6.Bay leaf
7.Cinnamon stick
8.Ghee 5 1/2 tbsp
9.Curry leaves
10.Turmeric powder 1/2 tbsp
11.Lemon juice 4 tbsp
12.Green cardamom 2
13.Mace Blade (Javitri)
14.Salt to taste


1.Take a pan pour some ghee 1 1/2 tbsp,heat it.
2.Add bay leaf,cinnamon stick,green cardamom,star anise,mace blade and cook for one minute.
3.Add soaked basmati rice,add 3 cups of water,salt and bring the mixture to boil.
4.Cover and cook till rice is done.
5.Take another pour 4 tbsp ghee,melt it.
6.Add cumin seeds,mustard seeds,chana dal.Saute till they splutter.
7.Add curry leaves,turmeric powder.
8.Add cooked rice and toss well.
9.Add salt,lemon juice and toss one again .Garnish with coriander leaves.
