Dahi Baingan


1.Brinjals 8 no. cut into cubes
2.Yogurt 2 cups
3.Salt to taste
4.Oil 2 tbsp + deep frying
5.Asafetida 1/4 tbsp
6.Green cardamoms 3-4
7.Fennel powder 1/4 tbsp (Sounf )
8.Dry ginger powder 1/2 tbsp
9.Red chilli powder 2 tbsp


1.Firstly whisk the curd with salt together.
2.Take a pan pour sufficient oil for deep frying,heat it.
3.Deep fry the brinjals till brown color and drain them onto absorbent paper.
4.Take another pan heat 2 tbsp oil,add asofetida,green cardamoms.Saute for few seconds and add to whisked yogurt.
5.Add fennel powder,dried ginger powder,red chilli powder.
6.Cook on medium heat for 2-3 minutes and add fried brinjals.
7.Cover and cook for 3-4minutes.And serve hot..!!!
