Corn and Cashew Cutlet


1.Potatoes boiled and grated 2 large
2.Sweet corn 1 cup
3.Fresh bread crumbs 1/2 cup
4.Cashew nuts crushed 10-12
5.Red chilli powder 1 tbsp
6.Onions finely chopped 1
7.Salt to taste
8.Corn flour 2 tbsp
9.Olive oil 1 tbsp
10.Oil for deep frying


1.Grind 1 cup sweet corn into coarsely paste.
2.Heat 1 tbsp olive oil in a pan.Add chopped onions and saut for 2-3 minutes.
3.Add red chilli powder and mix.Cook till dry and transfer into a bowl.
4.Add crushed sweet corn and saute well.
5.Add salt and mix well.Set aside to cool.
6.Heat oil for deep frying.
7.Take a bowl add grated potatoes,corn flour,bread crumbs,crushed cashew nuts and knead well.Shape them into small cutlets.
8.Gently drop them in hot oil and deep fry till golden brown and crisp.Serve hot..!!!
