1.Stuffing preparation:Fry onions,green chillies,turmeric powder, cashew nuts,coriander powder,gasagasalu,coconut powder,salt,red chilli powder saute till golden and prepare a smooth paste.
2.Take a pan pour 4 tbsp oil and heat it.
3.Add tempering seeds,cashew nuts saute for a minute.
4.Add onion chopped 1 cup,green chillies 5-6 cut and slitted,pinch of turmeric powder, saute till golden colour.
5.Add coconut powder 1 tbsp,coriander powder 1 tbsp,red chilli powder 1 tbsp,add remaining stuffed paste and give it a fine mix.
6.Cut and slit brinjals in four halves and stuff the paste in it and keep aside.
7.Fry for few minutes,add 1cup tamarind juice,some water as we needed for gravy consistency.
8.Add salt to taste,stuffed brinjals and mix well,cover and cook for few minutes till brinjals completely cooked and tender.Transfer into a bowl,garnish with coriander leaves.Serve hot.
