3.Onion chopped
4.Coriander seeds
5.Green chillies
6.Cumin seeds
7.Curry leaves
8.Turmeric powder
9.Salt to taste

1.Take a pan pour sufficient oil for deep frying.
2.Cut and slit brinjal in four quarters and deep fry in hot oil,keep turning the brinjals in between and fry.
3.Transfer into a bowl,take another pan pour some oil and heat it.
4.Add curry leaves,green chillies,onion chopped 1 cup saute for few minutes till golden.
5.Add pinch of turmeric powder and mix well.
6.Now stuff the brinjals with peanut powder (peanuts,garlic cloves,cumion seeds) keep aside.
7.Add stuffed brinjals,salt to taste,red chilli powder 1/2 tbsp and remaining powdered peanut and give it a good mix.Cook on medium flame.
8.Transfer into a bowl,garnish with coriander leaves.Serve hot.
