Chicken Keema Kulcha


1.Maida 4 cups
2.Chicken mince 2 cups
3.Salt to taste
4.Onion chopped 2 medium
5.Milk 4 tbsp
6.Ginger finely chopped 1 inch piece
7.Curd 4 tbsp
8.Butter melted for basting
9.Coriander leaves finely chopped 4 tbsp
10.Chat masala powder 2 tbsp
11.Red chilli powder 2 tbsp
12.Turmeric powder 1/4 tbsp
13.Garam masala powder 1 tbsp
14.Baking soda 1/2 tbsp
15.Garlic cloves crushed 4-5


1.Sieve 4 cups maida along with salt and baking soda into a deep bowl.
2.Add 4 tbsp milk,curd and mix.Add 1/2 cup water and knead into a smooth dough.
3.Cover the dough with damp cloth for 15 minutes and set aside.
4.Place a non stick pan on medium heat and pour 2 tbsp oil.
5.Add garlic crushed,ginger chopped and onions chopped,saute till light golden.
6.Add 2 cups chicken mince and cook stirring till moisture evaporates and chicken gets done.
7.Add salt to taste,red chilli powder,garam masala powder,turmeric powder,chat masala powder and coriander leaves.Give it a fine mix.
8.Divide the mixture into 8 equal portions and set aside to cool.
9.In the same way divide the dough into 8 portions equally,place some mixture in portion and bring the edges together.
10.Now roll into a ball,further roll into a thin layer these are called kulchas.Place the kulcha on non stick hot tawa,cook both the sides till light brown colour,keep flipping in between and grease with butter.Serve hot.
