Panchmela Daal


1.Toor dal 1 cup
2.Moong dal with skin/without skin 1/2 cup both
3.Chana dal 1/4 cup
4.Urad dal 2 tbsp
5.Salt to taste
6.Oil 1 tbsp
7.Ghee 1/2 tbsp
8.Bay leaf 1
9.Dry red chilli 1
10.Cumin seeds 1 tbsp
11.Cloves 5
12.Black pepper corns 5
13.Asafoetida 1/4 tbsp
14.Turmeric powder 1/2 tbsp
15.Onion 1 medium chopped
16.Ginger and garlic minced 1 tbsp
17.Green chillies to taste
18.Tomato 1 large pureed
19.Coriander powder 1 tbsp
20.Garam masala powder 1 tbsp
21.Cumin powder 1 tbsp
22.Red chilli powder 1/2 tbsp
23.Lemon juice to taste
24.Coriander leaves for garnishing


1.Combine all Daals and wash thoroughly. Soak for 30 minutes.
2.Add soaked daals to pressure cooker,add salt,water and cook for 1 whistle.Keep aside until pressure itself releases.
3.Meanwhile, heat 1 Tbsp Oil and 1/2 Tbsp Ghee in a pan on medium heat.
4.Add Bay leaf, Dry Red Chili, and Cumin Seeds. Allow Cumin Seeds to sizzle.
5.Add Cloves, Black Peppercorns, Asafoetida and Turmeric Powder. Mix.
6.Add onions and salt,cook for 1-2 minutes.
7. Add Garlic, Ginger and Green Chilies and cook for 2-3 minutes,add tomato puree and cook until oil separates from the mixture.
8.Add Coriander Powder, Garam Masala, Cumin Powder and Red Chili Powder. Mix and cook for 1 minute.
9.Add cooked Daals and mix well, Add 3-4 cups of Water allow Daal to come to a boil.Garnish with lemon juice and coriander powder.Serve hot.
