Eggless Fruit and Nut Cake Recipe


1.Dried Cranberries1/3 cup
2.Dried apricots 1/3 cup
3.Raisins 1/3 cup
4.Butter 1stick
5.Vanilla extract 1 tbsp
6.Rum or brandy few tbsp
7.Maida 1 3/4 cup
8.Sugar 1 cup
9.Baking soda 1 tbsp
10.Salt to taste
11.Cinnamon powder 1/2 tbsp
12.Nut meg powder 1/2 tbsp
13.Walnuts 1/4 cup
14.Pecans 1/4 cup
15.Almonds 1/4 cup
16.Cashews 1/4 cup
17.Candid Orange peel few


1.In a small pan add 2 cups water,cranberries,raisins,apricots.Cover and cook on medium heat with 10 minutes.
2. Pour water with fruits into a large mixing bowl.
3. Add Butter and mix until melted. Allow mixture to cool for about 10 minutes.
4. Add Vanilla Extract and Rum or Brandy (optional) and mix.
5.Preheat oven to 350F
6.In a separate bowl, combine All-purpose Flour, Sugar, Salt, Baking Soda, Cinnamon Powder and Nutmeg Powder.
7.Slowly add dry ingredients into the wet ingredients.
8.Pour mixture into a greased pan.
9.Bake for 35-40 minutes until toothpick comes out clean from the center.
10. Allow cake to cool in the pan for 30 minutes and flip out to further cool.
