Bottle Gourd Subzi


1.Bottle gourd 1/2 kg peeled and cubed
2.Onion 1/2 small sliced
3.Green chillies to taste
4.Tomato 1 medium chopped
5.Ginger 1 tbsp
6.Coriander leaves finely chopped
7.Oil 1 tbsp
8.Turmeric powder 1/2 tbsp
9.Salt to taste
10.Cumin powder 1/2 tbsp
11.Coriander powder 1 tbsp


1.Take a pressure pan add some oil and heat it.
2.Add ginger minced,turmeric powder and stir for 30 seconds.
3.Add in onions chopped and saute till translucent.
4.Add green chillies,salt,bottle gourd,water and mix well.
5.Cover and close the pressure cooker and cook for 1 whistle.
6.Turn off the flame and let the pressure release by itself.
7.Open the lid and give it a stir,transfer on to stove and cook on medium heat.
8.Add coriander powder,cumin powder,tomatoes and coriander leaves and mix well.
9.Cook till tomatoes are soft,cook for 5-7 minutes.We can mash the bottle gourd if need depends upon our preferences.
10.Cook till it attains thickness,serve hot with chapatis.
