Carrot and Green Chilli Pickle


1.Carrots 1 lb peeled and cut into juliennes
2.Green chillies 1/2 il
3.Salt 2 tbsp
4.Oil 4 tbsp
5.Mustard seeds 2 tbsp
6.White vinegar 2 tbsp
7.Asafoetida 1/8 tbsp
8.Lemon juice 1-2 tbsp


1.Take a large deep bowl add carrots,salt 2 tbsp and mix well.
2.Cover and mix well keep aside for 2 hours and mix frequently.
3.Using a sieve, drain off all liquid which has formed in the bowl.
4.Line a large tray with paper towels and spread the Carrots and Chilies in a single layer.
5. In a mixing bowl, add oil,mustard seeds,white vinegar,asafoetida,lemon juice and salt.
6.Mix well all the ingredients evenly.Finally add dried carrot and green chillies. Cover and keep aside for 3-4 hours.Store in a dry jar.
