Chicken Vindaloo


1.Chicken 1.25 kgs
2.Onion chopped 4 cups
3.Butter 2 tbsp
4.Kashmiri mirch 4 tbsp
5.Potatoes 2 medium peeled and cubed
6.White vinegar 2 tbsp
7.Dry red chillies 12
8.Cloves 7
9.Pepper corns 15
10.Cinnamon stick 2 piece
11.Ginger minced 2 tbsp
12.Garlic cloves 12
13.Cumin seeds 1 tbsp
14.Turmeric powder 2 tbsp
15.Salt to taste


1.Soak the Dry Red Chillies in 1/4 cup of White Vinegar for 30 minutes.
2.Add into blender along with Cloves, Peppercorns, Cinnamon Sticks, Ginger, Garlic, Deghi Mirch, Cumin Seeds and Turmeric Powder.
3.Grind into a smooth paste,if need we can use some water as we needed.
4.Now marinade chicken Dry Red Chillies – 12 or to taste,White Vinegar – 1/4 cup (4 tbsp),Cloves – 7,Peppercorns – 15 or to taste,Cinnamon Sticks – 2 piece,Ginger – approx. 2 tbsp, minced,Garlic – 12 large cloves,Cumin Seeds – 1 tbsp,Turmeric Powder – 2 tsp,Deghi Mirch,salt and refrigerate for 2 hours.
5.In the same grinder, blend the onions into a fine paste and mix into the marinated Chicken.
6.In a large pan, heat the Butter (Ghee) on medium heat.
7.Once hot add pepper corns and cloves.
8.Once they start sizzling, add in the Chicken and mix well.
9.Add in Potatoes, Deghi Mirch, Water and White Vinegar.
10.Mix, lower heat to a medium-low, cover and cook for approx. an hour.After and hour check on the Potatoes, they should be cooked.
11.Turn off the stove and serve over white Rice or Naans.
