Dry Baingan Sabzi


1.Brinjal 8
2.Besan flour 8 tbsp
3.Red Chilli powder 1 tbsp
4.Coriander powder 1 1/2 tbsp
5.Cumin powder 1 tbsp
6.Salt to taste
7.Dry mango powder 1 1/2 tbsp
8.Coriander leaves finely chopped 2 tbsp
9.Oil 3 tbsp


1.Wash brinjals well and remove the stem part of it.Now made 2 vertical slits through brinjals.
2.Take a bowl add in besan flour,red chilli powder,coriander powder,cumin powder,dry mango powder,salt to taste,coriander leaves and mix well.
3.Fill this stuffing in brinjals.
4.Now heat a pan with 2 tbsp oil,place the stuffed brinjals and cook on medium flame.
5.Drizzle 1 tbsp oil on brinjals,salt.Cover and cook.
6.Keep turning in between and cook evenly on both sides till done.
