Brinjal Chutney

Brinjal Chutney


1.Brinjals 4
2.Tomatoes 4
3.Oil 1 tbsp
4.Mustard seeds 1 tbsp
5.Onion1 chopped
6.Curry leaves
7.Green chillies 2 slit
8.Red chilli powder 1 tbsp
9.Coriander leaves 1 cup
10.Tamarind pulp 2 tbsp


1.Heat 1 tbsp oil,add mustard seeds and onions,cook until onions are soft.
2.Add curry leaves,brinjal and cook for a minute.
3.Add chopped tomatoes and mix well,cook for another minute.
4.Add green chillies,red chilli powder,salt,coriander leaves,tamarind pulp,water and mix well.
5.Pressure cook for 2 whistles and rest until pressure releases by itself.
6.Use masher and mash well.Now cook chutney uncovered in your desired consistency.Serve with rice or roti.
