Aloo Dum


1.Potatoes medium 4
2.Sesame seeds 1 tbsp
3.Oil 2 tbsp
4.Asafoetida 1/8 tbsp
5.Cumin seeds 1 tbsp
6.Besan flour 1 tbsp
7.Dried red chillies 4 whole
8.Curd 1/4 cup
9.Coconut powder 1 tbsp
10.Ginger 1/4 inch piece
11.Green chilli 1
12.Coriander powder 1 tbsp
13.Fennel seeds powder 1 tbsp
14.Turmeric powder 1/2 tbsp
15.Red chilli powder 1/2 tbsp
16.Paprika 1/2 tbsp
17.Salt to taste
18.Garam masala powder 1/2 tbsp
19.Coriander leaves 2 tbsp


1.Heat sufficient oil in a pan,deep fry potatoes till light brown colour for 5 minutes.Transfer onto a paper towel,remove excess oil.
2.Take another pan dry roast sesame seeds for a minute and keep aside.
3.Take a blender add in dry roasted sesame seeds,coconut powder,green chillies,ginger and add some water,blend into a smooth paste.
4.Transfer paste into a bowl,add in  coriander powder,fennel powder,turmeric powder,red chilli powder,paprika and curd.Mix well evenly.
5.Take another pan pour some oil and heat it,add in cumin seeds,asafoetida,besan flour,dried red chillies and saute for few seconds.
6.Add prepared ground paste and stir fry for a minute till mixture releases oil.
7.Add in fried potatoes and mix well and coat well with paste.Add in some water,salt to taste and bring it to boil.Add 1/2 cup water as per gravy consistency.
8.Cover and cook for 7-8 minutes,remove the lid add in coriander leaves,garam masala and mix well.Serve hot.
