Indian Zucchini Pasta


1.Zucchini 3 cups finely chopped
2.Oil 1 tbsp
3.Pinch of asafoetida
4.Cumin seeds 1/2 tbsp
5.Turmeric powder 1/4 tbsp
6.Dried red chilli 3-4
7.Bay leaf 1-2
8.Salt to taste
9.Sugar 1/8 tbsp
10.Lemon juice 1 tbsp
11.Ghee 2 tbsp
12.Wheat flour 1/4 cup


1.Mix flour, salt and water together to make a firm dough.Knead well.
2.Let the dough rest for at least five minutes or more.Divide the dough into 2 equal parts.
3.Make smooth ball and roll into circle like rot.
4.Wash and peel the zucchini and cut them in small pieces.
5.Heat some oil in a pan,add in cumin seeds,asafoetida,whole red chillies,bay leaf, and turmeric stir for few seconds.
6.Add zucchini, salt and about 2 cups of water. After it comes to boil let
it cook for 2-3 minutes. Add the pasta lower the heat to low medium
cover the pan and let it cook for 20-25 minutes.
7.Turn off the heat and add sugar.Before serving add in lemon juice.
