Vankaya Kandiginjala Kura


1.Brinjal 1 cup
2.Kandiginjalu 1/2 cup
3.Onion chopped 1
4.Green chillies 3
5.Ginger garlic paste 1 tbsp
6.Salt to taste
7.Red chilli powder
8.Coriander powder 1 tbsp
9.Tomatoes chopped 2
10.Turmeric powder
11.Oil 2 tbsp
12.Curry leaves
13.Cumin powder 1/2 tbsp
14.Coriander leaves


1.Take a pan pour some oil and heat it,add onions,green chillies,curry leaves and saute for few minutes.
2.Add ginger garlic paste,kandiginjalu and saute for few minutes.
salt to taste,red chilli powder,turmeric powder,coriander powder and
mix well.Now add brinjal pieces to the pan and saute till tender.
4.Cover and cook for few minutes,add tomatoes chopped,cumin powder and mix well.
some water as required and bring it to boil by covering a lid.Remove
the lid give it a stir.Transfer into a bowl and garnish with coriander
