Baingan Kofta Curry


1.Brinjal 1/4 kilo
2.Boiled potatoes 2
3.Green chillies chopped 2
4.Coriander leaves
5.Coriander powder 1 tbsp
6.Milk 1 cup
7.Cashew nut paste 1/2 cup
8.Onion chopped 1
9.Cumin seeds 1 tbsp
10.Ginger garlic paste 1 tbsp
11. Salt to taste
12.Red chilli powder
13.Besan flour 1/4 cup
14.Carom seeds 1 tbsp
15.Oil for deep frying
16.Butter 2 tbsp


1.Take a brinjal and scoop out the pulp from it and keep aside,repeat the same process for other brinjals.
2.Now take another bowl add mashed potatoes,green chillies,carom seeds,cumin seeds,salt,coriander leaves and mix well.
3.Stuff this mixture into scooped brinjal,dissolve besan flour in water and prepare a thick batter.
4.Dip the brinjal in batter and deep fry till tender and keep aside.
5.Take another pan add some butter and heat it,add in cumin seeds,green chillies,onion chopped and saute for few minutes.
6.Add ginger garlic paste,salt,red chilli powder and give it a stir.Now add cashew nut paste,coriander powder and give it a mix.
7.Add some milk as required and bring it to boil.Finally add fried brinjals and cook for another few minutes.Transfer into a bowl and garnish with coriander leaves.Serve hot.
