Verusenaga Vankaya Kurma


1.Peanuts 1 cup
2.Brinjal 1/4 kilo
4.Ginger small piece
5.Coriander leaves
6.Green chillies 4
7.Dried red chillies 4
8.Tempering seeds 1 tbsp
9.Curry leaves
10.Salt to taste
11.Oil 3 tbsp
12.Turmeric powder a pinch


1.Take a pan pour some water,add brinjals,salt,turmeric and bring it to boil till tender and soft.Cover it with a lid.
2.Take another pan pour some oil and heat it,add tempering seeds,dried red chillies and saute.
3.Add curry leaves,ginger and green chilli paste (ginger,green chillies,tamarind) and mix it well.
4.Add peanuts and boiled brinjals,give it a stir.Add some water as required,cover and cook for another few minutes till done.
5.Finally sprinkle some salt and coriander leaves,serve hot with rice.
