Vankaya Kobbari Pala Kura


1.Brinjal 1/4 kilo
2.Coconut milk 1 cup
3.Peanuts 1/2 cup
4.Green chillies 3
5.Coriander leaves
6.Onion chopped 2
7.Cumin seeds 1/2 tbsp
8.Coriander seeds 1 tbsp
9.Gasagasalu 1 tbsp
10.Whole garam masala
11.Garlic cloves 4
12.Mustard seeds
13.Curry leaves
14.Sesame seeds 1 tbsp
15.Turmeric powder
16.Red chilli powder
17.Salt to taste
18.Oil 3 tbsp
19.Ginger small piece


1.Take a bowl add onions and green chilli paste,masala paste (whole garam masala,coriander seeds,sesame seeds,garlic,peanuts,gasagasalu,cumin seeds,ginger) and mix well.
2.Add red chilli powder,turmeric powder,salt,coriander leaves and mix well.
3.Now make slits to the brinjals and stuff the masala paste,meanwhile heat some oil in a pan.
4.Add cumin,mustard,curry leaves,green chillies,remaining masala paste and saute for few minutes.
5.Add stuffed brinjals to the pan and stir gently,cover and cook for few minutes till brinjals are tender.
6.Add coconut milk and give it a stir,cover and cook till done.Transfer into a bowl and garnish with coriander leaves.Serve hot.
