Mixed Veg Lemon Rice


1.Lemon juice 4 tbsp
2.Rice 1 cup
3.Potato 1
4.Brinjal 2
5.Fresh coconut
6.Green peas 1/2 cup
7.Peanuts 1 tbsp
8.Green chillies 4
9.Dried red chillies 2
10.Curry leaves
11.Coriander leaves
12.Tempering seeds 1 tbsp
13.Turmeric powder 2 tbsp
14.Salt to taste
15.Oil 4 tbsp


1.Take a pan pour some oil and heat it,add tempering seeds,dried red chillies,green chillies,curry leaves and saute for a minute.
2.Add potatoes,green peas,peanuts,brinjal and fry for few minutes.
3.Cover and cook for 2 minutes till brinjal pieces are tenmder.
4.Add turmeric,coconut paste(coconut,green chillies,salt,coriander leaves) to the pan and saute well.
5.Fry for a minute,add salt cooked rice and mix well,coat well the rice and saute.Cook for a minute.
6.Switch off the flame and squeeze lemon juice and mix well.Transfer into a bowl and garnish with coriander leaves.Serve hot.
