Kharbooja Soya Kurma


1.Muskmelon pieces 2 cups
2.Soya granules 1 cup
3.Tomato paste 1/2 cup
4.Tempering seeds 1 tbsp
5.Dried red chillies 2
6.Ginger small piece
7.Garlic cloves 4
8.Green chillies 2
9.Whole garam masala
10.Onion 1
11.Coriander seeds 1 tbsp
12.Cashew nuts
13.Curd 1/2 cup
14.Salt to taste
15.Turmeric powder
16.Red chilli powder
17.Garam masala powder 1 tbsp
18.Coriander leaves
19.Oil 3 tbsp


1.Heat some oil in a pan,add ground masala paste (garlic,ginger,onion,green chillies,cinnamon stick,cloves) and saute for few minutes.
2.Transfer the fried masala paste into a separate bowl.In the sam pan add some more oil and heat it,add carrot,muskmelon and fry for few minutes.
3.Add fried masala paste,turmeric,soya granules and mix well.Add salt,curd,tomato puree and mix well,cook till raw smell goes off.
4.Sprinkle some garam masala powder,red chilli powder and give it a good mix.Add cashew nuts,some water as required and cook for few minutes on medium flame.
5.Heat some oil for tempering,add tempering seeds,dried red chillies and saute for a minute pour the tempering mixture into curry and garnish with coriander leaves and serve hot.
