Palak Pongal


1.Spinach shredded 1 cup
2.Rice 1 cup
3.Moong dal 1/2 cup
4.Green chillies 3
5.Onion chopped 1
6.Tomato chopped 1
7.Ginger chopped 1 tbsp
8.Cashew nuts
9.Pepper powder 1 tbsp
10.Cumin seeds 1/2 tbsp
11.Curry leaves
12.Dried red chillies 2
13.Coconut milk 1 cup
14.Ghee 2 tbsp
15.Salt to taste
16.Oil 1 tbsp


1.Heat some ghee,oil in a pan,add ginger,pepper,cumin seeds,dried red chillies,onions and saute for few minutes.
2.Add tomatoes till soft and tender,now add spinach and saute till tender.
3.Add soaked moong dal,rice to the frying pan and fry for few minutes.
4.Add coconut milk,2 cups water,salt and bring it to boil.Cover and cook till done.
5.Transfer into a bowl and garnish with fried cashews and curry leaves.Serve hot.
