Vankaya Majjiga Pulusu


1.Brinjals 2
2.Buttermilk 1 cup
3.Besan flour 1/2 cup
4.Tomatoes chopped 2
5.Onion chopped 1
6.Tempering seeds 1 tbsp
7.Curry leaves
8.Salt to taste
9.Turmeric powder a pinch
10.Coriander leaves
11.Dried red chillies 2
12.Ginger small piece
13.Green chillies 3
14.Oil 2 tbsp


1.Heat some oil in a pan,add dried red chillies,mustard,cumin seeds,curry leaves and saute for few minutes.
2.Add brinjal,onions,salt,turmeric powder and saute for few minutes.
3.Cover and cook for few minutes till tender,add some water as required and saute for few minutes.
4.Add tomato,cover and cook till tender.Dissolve besan flour in curd and mix well without any lumps.
5.Add ginger green chilli paste and mix well for few minutes.Finally add curd mixture to the frying pan.
6.Add some water as per consistency and cook for few minutes,transfer into a bowl and serve hot.
