Vankaya Sprouts Curry


1.Brinjals 1/4 kilo
2.Boiled Mixed Sprouts 1cup
3.Boiled Potato 1
4.Tomatoes chopped 2
5.Onion chopped 1
6.Curry leaves
7.Coriander leaves
8.Garam masala powder 1 tbsp
9.Cumin powder 1/2 tbsp
10.Coriander powder 1 tbsp
11.Salt to taste
12.Turmeric powder
13.Ginger garlic paste 1 tbsp
14.Dried red chillies 2
15.Tempering seeds 1 tbsp
16.Oil 2 tbsp


1.Heat some oil in a pan,add dried red chillies,tempering seeds,curry leaves and saute for few seconds.
2.Add onions,brinjals and fry for few minutes,add tomtaoes,cover and cook for few minutes till tomatoes are soft and cooked.
3.Add ginger garlic paste  and fry for a minute,add some water as required and bring it to boil by covering a lid.
4.Add mixed sprouts,potato mashed,turmeric powder,coriander,cumin powder,garam masala powder and mix well.Add some water,cover and cook for 2 more minutes.Sprinkle some red chilli powder and give it a good stir.Transfer into a bowl and serve hot.
