Vankaaya Perugu Curry

Ingredients
:


1.Brinjal
2.Curd
3.Salt
4.Turmeric
5.Red chilli powder
6.Coriander powder
7.Coriander leaves
8.Onions
9.Green chillies
10.Ginger
11.Tomatoes
12.Cumin seeds
13.Jaggery
14.Garam masala powder
15.Oil

Preparation:

1.Heat some oil in a pan,add cumin seeds,grated ginger,onions and saute for a minute.
2.Add turmeric,brinjal,salt and mix well,cover and cook for 5 minutes.
3.Take a bowl,combine curd,coriander powder,salt,red chilli powder,green chillies,coriander leaves and mix well.
4.Add tomatoes,cover and cook for another 2 minutes.Add grated jaggery and give it a mix.
5.Add curd mixture,mix well.Cover and cook for 2 minutes.Sprinkle some coriander powder and serve hot.
