Drumstick and Plantain Biryani
8.Dried red chillies
14.Ginger garlic paste
1.Dry roast all ingredients(Poppy seeds,Cardamom,Cloves,Cinnamon,Coconut slices,Dried red chillies,Mace,Bay leaf,Coriander seeds) on low flame till fragrant.Blend into powder.
2.Heat some oil,fry plantains till slightly brown colour and keep aside. Now add in onions,salt,and saute till onions are brown in colour.
3.Add drumsticks,turmeric,ginger garlic paste,green chillies,mint leaves,coriander leaves and fried plantains.
4.Add yogurt,tomato slices and blended masala to the frying pan.Add in some water,cover and cook till plantains are tender and soft.
5.Boil some water on large bowl by adding oil,salt.Meanwhile soak basmati rice for 30 minutes.
6.Add rice to boiling water and cook till 80-90% done.Now add 80% done rice to frying pan by forming a layer.Sprinkle some coriander leaves and drizzle some ghee on top of the rice.
7.Cover and cook till 10-12 minutes and switch off the flame and rest for 5 minutes.
8.Fluff the rice with wooden spatula gently and add in fried bread pieces.Serve hot with raita or any curry.
