Pineapple Coconut Kheer

Ingredients:

1.Pineapple
2.Milk
3.Coconut powder
4.Corn flour
5.Sugar
6.Pistachios
7.Coconut Milk

Preparation:

1.In a heavy bottom pan over medium high heat boil the milk, coconut milk, coconut and 1 tablespoon of sugar together.
2.Boil the milk for around 18-20 min.Meanwhile combione corn flour with some water make sure there are no lumps.
3.Now add corn starch to the boiling milk and mix well,stir for few seconds and set aside.
4.Drain the syrup from pineapple, and slice them into about ¾ inch cubes, save half the cubes and other half blend crush.
5.In a heavy bottom pan,add pineapple cubes,sugar and mix well.Stir well and pineapple starts caremelized.
6.Take out half the pineapple over Take out half the pineapple over to garnish.
7.Next add crushed pineapple to the remaining pineapple and cook for another 2-3 minutes till caramelized. Set aside.
8.Serve Pineapple Coconut Kheer chilled. Garnish with caramelized pineapple and pistachios.
