Prawn and Eggplant Fried Rice

Ingredients:

1.Prawns
2.Pepper corns
3.Ghee
4.Bay leaves
5.Whole garam masala (cinnamon,cardamom)
6.Onion sliced
7.Salt to taste
8.Green chillies chopped
9.Coriander leaves
10.Coconut grated
11.Ginger garlic paste
12.Turmeric powder
13.Coriander powder
14.Brinjal
15.Red chilli paste
16.Garam masala powder
17.Coconut milk
18.Cooked rice
19.Lemon juice


Preparation:

1.Take a pan pour some ghee and heat it,add pepper corns,bay leaves,whole garam masala,onions,salt and saute till light golden colour.
2.Add coriander leaves,coconut grated and saute till it changes into light brown,add ginger garlic paste,turmeric powder and saute for few seconds.
3.Add coriander powder,brinjal pieces and saute till tender and soft,cook on medium flame.Now add prawns to the pan and mix it well.
4.Add red chilli paste,garam masala powder,coconut milk and mix well evenly all the ingredients.
5.Cover and cook on slow flame till prawns are done.Finally add cooked rice and toss well.
6.Add chopped coriander leaves and squeeze half lemon and serve hot.
