Menthi Chikkudu Vankaya Kura
1.Brinjal 1/4 kilo
2.Chikkudukayalu 1/4 kilo
3.Menthikura (Fenugreek leaves) 1 cup
4.Onion chopped 1
5.Green chillies 3
6.Ginger garlic paste 1/2 tbsp
7.Tomatoes chopped 1
8.Red chilli powder
9.Salt to taste
11.Oil 2 tbsp
1.Take a pan pour some oil,heat it.
2.Add onions,green chillies,ginger garlic paste and saute.
3.Add menthikura and fry for few minutes.Add chikkudukaya,brinjal pieces and give it a mix.
4.Cover and cook for few minutes till done.
5.Add salt,red chilli powder,turmeric powder,tomatoes and give it a mix.
6.Cover and cook for few more minutes,give it a mix finally.
7.Add coriander leaves,transfer into a bowl and serve hot with chapathi or rice.
