Ingredients:

1.Brinjal
2.Tamarind
3.Jaggery
4.Peanuts
5.Turmeric powder
6.Mustard seeds
7.Hing
8.Coriander leaves
9.Curry leaves
10.Red chillies
11.Salt to taste
12.Ginger
13.Oil
14.Urad dal
15.Chana dal
16.Coriander seeds
17.Cumin seeds
18.Sesame seeds
19.Fenugreek seeds

Preparation:

1.Dry roast red chillies,urad dal,peanuts,chana dal,coriander,cumin,fenugreek seeds,sesame seeds and roast till nice aroma.
2.Now blend the mixture into a fine powder along with ginger,salt.
3.Cut the brinjals into 2 halves and stuff the ground mixture.
4.Heat some oil in a pan,add stuffed brinjals,cover and cook for 5 min.Keep turning in betwenn and cook.
5.Once brinjals turn tender add tamarind juice,salt,turmeric powder a pinch,roasted sesame seeds,jaggery,ground powder,curry leaves and bring it to boil by covering a lid.
6.Transfer into a bowl,heat some oil in a pan,add red chillies,hing,mustard seeds,curry leaves and pour n top of mixture,serve hot with coriander leaves.
