Usiri Chikkuduginjala Koora

Ingredients:

1.Usirikayalu
2.Chikkuduginjalu
3.Tomatoes
4.Tempering seeds
5.Salt to taste
6.Red chilli powder
7.Turmeric powder
8.Red chillies
9.Hing
10.Coriander leaves
11.Fenugreek leaves
12.Fennel seeds
13.Coriander seeds
14.Green chillies
15.Ginger garlic paste
16.Oil

Preparation:

1.Pressure cook usirikaya pieces for 1 whistle and keep aside.
2.Heat some oil in a pan,add tempering seeds,red chillies and saute for few seconds.
3.Add
tomatoes,chikkuduginjalu,curry leaves,turmeric,ginger garlic
paste,green chilli,hing,fennel seeds and mix well.Cook for 5 min.
4.Cook till tomatoes are tender,add fenugreek leaves and mix well.Cover and cook till leaves are tender.
5.Finally
add boiled usirikaya pieces to the frying pan and mix well.Add
coriander seeds,salt,red chilli powder and mix well.Cover and cook for 2
min till done.Serve hot.
