1.Brinjals 4
2.Tomatoes chopped 1 cup
3.Red chilli powder 1/2 tbsp
4.Coriander leaves
5.Ginger garlic paste 1/2 tbsp
7.Tempering seeds 1 tbsp
8.Green chillies 2-3
9.Salt to taste
10.Coriander powder 1/2 tbsp
11.Onion chopped
12.Jaggery 1 tbsp
13.Tamarind juice 1 cup


1.Fry the brinjals on the stove directly for few minutes and peel the skin.
2.Transfer the fried brinjal mixture into a bowl,add tomatoes chopped and mix it well.
3.Take a pan pour some oil and heat it.
4.Add tempering seeds,green chillies and saute.
5.Add onion chopped,red chilli powder,coriander powder,ginger garlic paste and give it a mix.Add coriander leaves and fry for few minutes.
6.Now add brinjal mixture into it and give it a good mix.
7.Add 1 cup tamarind juice,salt and some water as we needed.
8.Cover and cook for few minutes,add jaggery 1 tbsp and mix well finally.
9.Transfer into a bowl and garnish with coriander leaves.
