Ingredients:

1.Brinjal
2.Green chillies
3.Oil
4.Mustard seeds
5.Onion chopped
6.Peanuts
7.Cumin seeds
8.Salt to taste
9.Curry leaves
10.Pandu mirchi karam
11.Turmeric powder
12.Ginger garlic paste
13.Red chilli powder
14.Coriander leaves

Preparation:

1.Dry roast peanuts on medium flame for few minutes.
2.Take another pan pour 1 tbsp oil and fry onion chopped for few minutes.
3.Grind peanuts,onions,pandu mirchi paste 1 tbsp into rough grinded.
4.Take a pan pour 1/2 cup oil and heat it.
5.Cut brinjals into four halves and drop them in hot oil till tender.Fry for 5 minutes.
6.Transfer the brinjals into a plate and stuff the onion mixture set aside.
7.Take a pan pour some oil and heat it add cumin,mustard seeds,green chillies cut and slitted,onion chopped 1 cup and saute till golden.
8.Add 1/2 tbsp turmeric powder,ginger garlic paste 1/2 tbsp and saute,add red chilli powder,salt 1/2 tbsps and give it a mix.
9.Finally add stuffed brinjals,curry leaves,cover and cook for 1 minute till done.Serve hot..!!!
