Green Masala Vankaya Curry


2.Coriander leaves
3.Onion paste
4.Green chilli paste
6.Ginger garlic paste
7.Turmeric powder
8.Coriander powder
9.Salt to taste
11.Cumin seeds


1.Take a pan pour 1/2 cup oil and heat it.
2.Add 1 cup onion paste and saute for few minutes,add 1 tbsp cumin seeds,pudina leaves,coriander leaves,green chilli paste 1/2 cup,ginger garlic paste 1 tbsp,a pinch of turmeric powder,coriander powder 1 tbsp and mix well,fry for few minutes.
3.Now add cut and slitted brinjals in fried mixture and give it a mix.
4.Add salt to taste,give it a fine mix.
5.Cover and cook for 10 minutes.
6.Sprinkle some coriander leaves and give it a fine mix,cover and cook for few more minutes till done.Serve hot.
