Menthikoora Vankaya Curry

Ingredients:

1.Fenugreek leaves (Menthikoora)
2.Brinjal
3.Oil
4.Cumin seeds
5.Mustard seeds
6.Onion chopped
7.Green chillies
8.Dry red chillies
9.Curry leaves
10.Turmeric powder
11.Red chilli powder
12.Salt to taste
13.Coriander powder

Preparation:

1.Take a pan pour some oil and heat it.
2.Add cumin seeds,mustard seeds,dry red chillies 4,curry leaves,green chillies 5-6 saute for a minute.
 3.Add onion chopped 1 cup and saute till llight golden colour.
4.Add brinjal pieces and give it a mix,add pinch of turmeric powder,fenugreek leaves 1 cup and give it a mix.
5.Cover and cook for 2-3 minutes till tender,add red chilli powder 1/2 tbsp,coriander powder 1/2 tbsp,salt to taste and give it a one more stir.
6.Cover and cook for another 4 minutes on medium flame.Give it a fine stir.Transfer into a bowl,garnish with coriander leaves.Serve hot.
