Mushroom and Corn Pulao


1.Basmati rice soaked 1 1/2 cup
2.Button mushrooms sliced 20-25
3.Corn kernels 3/4 cup
4.Oil 1 tbsp
5.Cumin seeds 1 tbsp
6.Bay leaf 1
7.Cloves 2
8.Black pepper corns 5
9.Green cardamoms 2
10.Black cardamom 1
11.Mace 1 blade
12.Ginger chopped 1 inch piece
13.Green chillies slit 2-3
14.Salt to taste
15.Lemon juice 1 tbsp


1.Take a pan pour 1 tbsp oil and heat it.
2.Add cumin seeds and when they start to change in colour add bay leaf,cloves,pepper corns,green cardamoms,black cardamom,cinnamon stick,mace blade.Saute for few seconds.
3.Add 1 inch ginger chopped,green chillies slit,mix well.Fry for a minute.
4.Add corn kernels,mushrooms sliced and fry for 2-3 minutes.
5.Add basmati rice 1 1/2 cups,water 3 cups,salt give it a stir.Bring it to boil.
6.Cover and cook over medium heat until the water has almost absorbed by rice.Finally add lemon juice 1 tbsp and mix gently.Serve hot.
