Baingan Raita


1.Brinjal Cut into semi circles
2.Oil 1 tbsp
3.Mustard seeds 1/4 tbsp
4.Onion 1 small finely chopped
5.Garlic 1 tbsp minced
6.Turmeric powder 1/4 tbsp
7.Green chilli to taste
8.Salt to taste
9.Curd 2 cups
10.Coriander leaves for garnishing


1.Heat Oil in a non-stick pan.
2. Add Mustard Seeds and allow them to pop.
3.Add Onions, Garlic, Turmeric Powder and Green Chilies. Cook until Onions are translucent.
4.Add Brinjal (baingan) and cook on high heat until almost tender. Stir frequently.
5. Reduce heat to low, cover and cook till tender.
6.Remove the mixture into a bowl,cool to room temperature.
7.Add Salt to Yogurt and mix well. Add cooled Eggplant into the yogurt and mix well.Garnish with coriander leaves and serve.
