Kaju Mushroom Masala

Ingredients:

1.Mushrooms 4 oz
2.Cashew nuts 4 tbsp
3.Tomato 1
4.Oil 3 tbsp
5.Cumin seeds 1/2 tbsp
6.Whole garam masala
7.Garam masala powder 1/2 tbsp
8.Coriander powder 1 tbsp
9.Red chilli powder 2 tbsp
10.Onion 1 chopped finely
11.Garlic chopped 1 tbsp

Preparation:

1.Wash and soak broken cashew nuts in warm water for 2 hours.
2.Add soaked cashew nuts and 1 tomato,blend well into a smooth paste.
3.Heat up oil,add whole garam masala,cumin seeds and finely chopped onions.
4.Saute onions tills light brown color.
5.Add chopped garlic and cook for a minute,add in coriander powder,cumin powder,red chilli powder and mix well,cook for 2 minutes.
6.Add tomato puree,mix well and cook for 7-8 minutes until oil separates from the mixture.
7.Add water as per gravy consistency,add salt,sugar and mix well.Cover and cook for another 5 minutes.
8.Add whole cashew soaked for 2 hours,mushrooms chopped.Mix well.
9.Cover and cook until mushrooms are done.Serve hot.
